Is Carrot Cake Healthier Than Regular Cake?
In general, carrot cake is a healthier option than regular cake but it still needs to be eaten in moderation. However, if you want to make a carrot cake that is healthier than regular carrot cake then using healthy ingredients is the answer. This recipe that I am about to share with you includes ingredients that are wholesome and healthy to ensure that you are enjoying this treat guilt-free.
Ingredients Needed To Make Carrot Cake Muffins:
- Oat flour: if you do not have oat flour then you can just use regular oats and blend it until you get a flour-like consistency
- Grated carrots
- Eggs
- Organic coconut sugar: Instead of using normal sugar, which is refined sugar. We will be using organic coconut sugar which is not only healthy and unrefined but also has this caramel-like taste to it which I find makes all my baked goods taste amazing.
- Organic Coconut Oil: melted and cooled
- Pure vanilla extract: adds extra flavour
- Ground Cinnamon
- Sea salt: this is unrefined and a healthier alternative to table salt.
- Spices: we will be using nutmeg and ginger
- Baking soda
- Chopped walnuts: this is optional but I find this adds crunch to your carrot cake and tastes amazing. I also added chopped pecan on top of the icing.
- For the icing:
- Organic soft cheese
- Maple syrup: make sure this is 100% organic maple syrup as a lot of other syrups contain refined sugars
- Pure vanilla extract
