Easy Healthy Chocolate Chip Cookies

Ingredients To Make This Gluten-Free Healthy Chocolate Chip Cookies
- Organic coconut sugar: this is unrefined, low in glycemic index, and has hints of caramel flavour and a slight coconut undertone.
- Peanut butter: this gives the biscuit the perfect peanut butter taste but you can swap it with any nut butter of your choice. Make sure it says 100% peanut/your choice of nut butter with no added ingredients e.g. palm oil.
- Egg: the egg will help the cookies from falling apart when baking.
- Baking soda
- Sea salt: a healthy alternative to table salt as sea salt has lower sodium and more minerals
- Pure vanilla extract
- Chocolate chips: the best part! You can add as much as you want but I found ½ cup is enough.

How To Make These Healthy Peanut Butter Chocolate Chip Cookies:
These were so easy to make with only a few ingredients all mixed in one bowl. Here are the steps:
- Preheat the oven to 180°C
- Line one or two oven-safe trays (depending on the size of the trays) with nonstick baking paper
- In a bowl, mix all the ingredients together with a spatula (or your hands) – mix until you are left with a dough-like texture
- Then fold in the chocolate chips
- Scoop the dough with a tablespoon (make sure it is 1 heaped tablespoon) and roll it into a ball, then slightly flatten (just a little). This should make around 16 cookies.
- Pop in the oven and enjoy!

How To Store Your Cookies
Proper storage is important to maintain the freshness and texture of chocolate chip cookies. Here are some tips on how to store them effectively:
- Cool completely: Allow the chocolate chip cookies to cool completely on a wire rack before storing them. This helps prevent condensation and moisture buildup when they are placed in a container.
- Airtight container: Place the cooled cookies in an airtight container, such as a cookie jar, plastic container, or resealable bag.
- Room temperature: If you plan to consume the cookies within a few days, they can be stored at room temperature in a cool, dry place away from direct sunlight. However, ensure that the storage area is not too warm or humid, as this can cause the cookies to become stale or lose their texture.
- Freezing: For longer-term storage, chocolate chip cookies can be frozen. Place them in a freezer-safe container or resealable bag. It’s a good idea to separate layers with parchment paper to prevent them from sticking. When ready to eat, thaw the cookies at room temperature or warm them briefly in the oven.
