How To Make These Chocolate Chip Cookie Baked Oatmeal
- Preheat the oven to 180°C.
- In a blender, combine the oats, milk, peanut butter, maple syrup, cinnamon, baking powder, and salt. Blend until you have a smooth batter.
- Add in the chocolate chips to the blender and fold in with a spoon. Pour into a small greased ramekin and top with additional chocolate chips.
- Make sure to fill in the ramekin halfway so it doesn’t overflow in the oven.
- Bake for 15-20 minutes at 180°C (I found 17 minutes was perfect but I’ve said 15-20 minutes because it depends on your oven). Stick a skewer in, and if it comes out dry after 15-17 minutes then take it out! If you overcook the baked oats then it will come out dry.
- Let it cool for at least 10 minutes before you enjoy it!

Refrigeration:
After your let them cool completely, cover the ramekin with some foil or cling film (making sure no air is going in). Place in the fridge and they’ll last up to 3 days. When you want to enjoy, just heat up for 30-45 seconds in the microwave.
