Peanut Butter Oat Cups
Equipment
- Muffin tray (with 6 cups)
- Mixing bowl
Ingredients
For the base
- 3/4 cup Organic jumbo oats
- 2 tbsp Smooth peanut butter any nut butter of your choice (or you can swap it with a seed butter e.g. seasame butter)
- 1-2 tbsp Pure maple (this will depend on how sweet you want it) you can swap with agave nectar or date syrup
- pinch of Sea salt
Peanut butter and chocolate layer
- 5-6 tbsp Smooth peanut butter
- 1 tbsp Pure maple syrup
- 70 grams Dark chocolate
- 1/2 tbsp Coconut oil this is optional but I used it to melt with the chocolate to create a smooth texture
Instructions
- In a bowl, combine jumbo oats, peanut butter, maple syrup, and salt; mix well.
- Distribute a tablespoon of the mixture into each muffin tin cup, flatten with a spoon, and freeze for 10-15 minutes.
- While freezing, mix peanut butter and maple syrup in a bowl and set aside.
- Melt dark chocolate (with optional coconut oil) in a saucepan or microwave.
- Take out the muffin tin from the freezer, add a tablespoon of peanut butter on top, spread and flatten, and top with melted chocolate.
- Place in the fridge for 20-30 minutes or until hardened.
