This post is all about pecan pie bites.
Pecan Pie Bites

Ingredients Needed:
- Medjool dates: This acts as a binder and adds that delicious date sweetness.
- Pecans: I know this is called pecan pie but you can definitely sub these for any nuts you prefer- for example, cashews or walnuts would also taste so good.
- Organic coconut sugar: This is a healthier alternative to normal sugar plus gives that amazing caramel-like taste.
- Ground cinnamon: Adds extra flavour.
- Sea salt/Himalayan salt
- Chocolate chips: Or any chocolate you prefer as long as you can melt it to cover your pecan pie bites.
- Coconut oil: This will help the melted chocolate have a smooth texture making it easy to cover the bites.
Equipment Needed:
- Powerful food processor: I have this one HERE that I absolutely love. I would definitely recommend it.
- Non-stick baking paper: This will be used to place the chocolate pecan pie bites so it is easier to remove once they have hardened.

How To Make These Chocolate-Covered Pecan Pie Bites
This recipe is wonderfully straightforward, and it just needs a bit of patience.
- If your Medjool dates aren’t completely soft, soak them in hot water for 10-15 minutes until they become tender. Then, drain them.
- In your food processor, combine the soaked dates with all the other ingredients (except for the chocolate).
- Blend everything until you achieve a smooth consistency. You might notice small pecan bits remaining, which is perfectly fine, as long as they aren’t large pieces. This is where the patience part comes in: you’ll need to scrape down the sides to ensure everything blends well. It may take a few minutes. Having a powerful food processor, like the one I use HERE (they kindly gifted it to me), is a game-changer. It’s not only powerful but also spacious, making the process mess-free.
- Once the mixture is blended, transfer it to a plate and place it in the fridge for 15-20 minutes until it firms up a bit and becomes less sticky.
- Remove the mixture from the fridge and shape it into balls. You can leave them as balls or flatten them, as I did.
- Place them in the freezer for another 15 minutes to make the next step easier.
- In a bowl, melt the chocolate with a bit of coconut oil. The coconut oil will ensure the melted chocolate is smooth, making it easier to coat the pecan pie bites. Melt the mixture in the microwave in 30-second intervals until it’s completely liquefied. Let it cool for a few minutes, then begin covering your pecan pie bites with the chocolate.
- Place the coated bites on non-stick baking paper, and if you’d like, add a pecan on top (this is optional).
- Put them in the fridge until the chocolate has hardened. Alternatively, you can place them in the freezer for 15-20 minutes to speed up the process.
- Enjoy!

How to Store Your Healthy Pecan Pie Bites
Storing chocolate-covered pecan pie bites properly is essential to maintain their freshness and flavour. Here’s how you can store them:
- Refrigeration: it’s best to refrigerate your chocolate-covered pecan pie bites. Place them in an airtight container or a resealable plastic bag. This way the chocolate won’t melt. They will last you for 1-2 months.
