This post is all about the ultimate date truffles recipe.
Date Truffles
Ingredients Needed
- Medjool Dates
- Cashew Nuts: Make sure they are not roasted cashews. They need to be raw cashew nuts.
- Peanut Butter: You can use any nut butter of your choice such as almond or cashew butter. Just make sure whichever nut butter you choose to use is 100% peanut/cashew/almond butter. This makes the date truffles remain as healthy as possible.
- Maple Syrup: This needs to also be 100% maple syrup. You can also use date syrup or agave syrup if you do not wish to use maple syrup.
- Cocoa powder
- Desiccated coconut: This will be used to coat the date truffles for extra flavour and also decoration. But you can use any other toppings such as chopped pistachio, melted chocolate, or even cocoa powder.
How To Make Date Truffles
- Begin by soaking your cashews in hot water. Allow them to sit in the water for about 2-3 hours. This soaking process helps soften the cashews, making them easier to blend.
- While the cashews are soaking, take your Medjool dates and cut them into small chunks. This will make it easier for them to blend smoothly later on.
- After the cashews have soaked, drain them and add them to a high-powered blender or food processor. Also, add the chunks of Medjool dates, peanut butter, and maple syrup to the blender.
- Start blending the ingredients until they form a smooth and creamy mixture. It may take a few minutes, and you might need to scrape down the sides of the blender to ensure everything is well incorporated.
- Once the mixture is smooth, add the cocoa powder to the blender. Blend again until the cocoa powder is fully integrated into the mixture. If you notice any cocoa powder hasn’t blended in completely, you can mix it in with your hands as if you were working with dough (make sure it is out of the blender though).
- Transfer the blended mixture to a plate and then into the fridge and let it chill for approximately 20 minutes. This will help firm up the mixture, making it easier to shape into truffles.
- Take the chilled mixture out of the fridge and start shaping it into small truffle-sized balls. You can decide how large or small you want them to be. This mixture should make around 10 date truffles.
- Roll each truffle in your preferred toppings. For instance, you can use desiccated coconut or any other toppings you like. This adds extra flavour and texture to your truffles.
- After shaping and topping the truffles, return them to the fridge for at least 30 minutes or until you’re ready to enjoy them. This additional chilling time helps the truffles set.
- And that is it! Enjoy your healthy date truffles!
Equipment Needed For This Date Truffles Recipe
As I mentioned in the introduction, you need to make sure your blender is high-powered or you will need to use a food processor. When I made these I used my blender, which I unfortunately found that it wasn’t powerful enough. This just made the process very messy and I had to transfer everything into my food processor. Below I have linked two good ones!

How To Store
Once you’ve created your delicious date truffles, it’s essential to store them properly to maintain their freshness and flavour. Here’s how to do it:
- Refrigeration: This will extend their shelf life and maintain their texture by preventing them from softening or melting. Remember to use an airtight container even when storing in the fridge.
- Airtight Container: Place your date truffles in an airtight container with a tight-sealing lid. This helps prevent moisture and air from affecting their texture and taste. You can use a plastic container or a glass one with a silicone or rubber gasket.
