Ingredients Needed
- Ripe bananas
- Melted butter
- Maple syrup
- Greek yogurt
- Eggs
- Vanilla extract
- Flour
- Baking powder
- Baking soda
- Salt
- Cinnamon powder
- Lemon zest
- Blueberries
How To Make This Moist Lemon Blueberry Banana Bread
- Start by preheating your oven to 175°C fan and melting the butter in a saucepan. Once the butter has melted, set it aside to cool slightly while you prepare the banana bread mixture.
- Mash the bananas in a large bowl, then add all of the wet ingredients, including the maple syrup, vanilla extract, Greek yogurt, and eggs. Pour in the melted butter and mix everything together until well combined.
- In a separate bowl, combine the flour, baking powder, baking soda, salt, and cinnamon. Pour the dry ingredients into the wet mixture and gently fold everything together until just combined. Be careful not to overmix the batter, as this can make the banana bread dry.

- Add in the washed blueberries and lemon zest, then carefully fold them into the batter.

- Grease a loaf pan with a little butter and line it with non-stick baking paper. Pour the batter into the loaf pan and smooth the top out with a spatula. Gently tap the pan onto the worktop a few times to help even out the mixture.

- This next step is optional, but I found it works really well to stop the top from becoming too crispy or hard. Cover the top loosely with foil and bake for the first 20 minutes. After 20 minutes, carefully remove the foil and continue baking.
- Bake for another 20 minutes, then insert a skewer or fork into the centre. If it comes out wet, bake for another 10 minutes. This would make the total baking time around 50 minutes. Check again, and if it still comes out slightly wet, bake for a final 5 minutes.
- The banana bread should take around 55 minutes in total (could be 50 minutes depending on your oven), but keep checking at the suggested times as every oven is different.
- Enjoy!

How To Store And Heat Up
Once the banana bread has completely cooled down, you can either wrap it in foil or store it in an airtight container and keep it in the fridge. When you’re ready to enjoy a slice, simply heat it in the microwave for around 20 seconds until warm and soft.
If you are meal prepping this lemon blueberry banana bread and want it to last longer, wait for it to cool completely before slicing it. Wrap each slice individually in cling film and place them into a freezer-safe bag or container.
When you want to enjoy a slice, you can either leave it out to defrost first and then heat it in the microwave for around 30 seconds, or microwave it straight from frozen for 1–2 minutes. Just make sure to heat it in 30-second intervals so it warms through evenly.
