Sure, we can enjoy the occasional store-bought muffin. However, if you want to enjoy these delightful treats guilt-free, I have just the solution for you: gluten-free peanut butter muffins – a healthier alternative that doesn’t compromise on taste.

Oat Flour:

Peanut Butter:
For peanut butter to offer its health benefits, you need to ensure it is peanut butter that says 100% peanut butter with no added unnecessary ingredients.

How To Store:

Alternatively, you can freeze them for up to 3 months. When you are ready to eat them, thaw them at room temperature or pop them in the microwave in 30-second intervals.
Gluten-free Peanut Butter Muffins
Equipment
- Muffin tray
- 12 Cupcake liners
- 1 Mixing bowl
Ingredients
- 3 medium ripe bananas
- 3/4 cup smooth peanut butter
- 2 large eggs
- 1/4 cup agave syrup (or maple syrup)
- 2 tsp vanilla
- 1/2 tbsp almond milk (or any milk of your choice)
- 1 cup oat flour
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp sea salt (or a salt of your choice)
- 1/3 cup chocolate chips (if you want the muffins to be completely dairy free then make sure the chocolate chips are dairy free too)
Instructions
- Pre-heat the oven to 175°C (fan)
- Mash the bananas and add the peanut butter, eggs, agave, vanilla, and almond milk. Mix it until smooth
- Then fold in the oat flour, baking powder, cinnamon, and sea salt. Once you mix it in, fold in the chocolate chips
- Put the cupcake liners in the tray and add a 1/4 cup or full tablespoon of the batter to each liner
- Top it up with some chocolate chips
- Pop in the oven for 20 minutes. Once it is cooked, leave them out to cool down.
- Enjoy!
