Crispy Roasted Baby Potatoes Recipe
Ingredients Needed
- Baby potatoes (leave the skin on)
- Extra virgin olive oil
- Salt
- Black pepper
- Paprika
- Garlic granules
- Dried thyme
- Cheese (I used mild cheddar cheese but you can use a cheese of your choice)
- Butter
How To Make The Best Roasted Baby Potaoes
- Wash the baby potatoes thoroughly and pat them dry with a tissue, making sure they’re completely dry. Keep the skin on for extra crispiness.
- Place them in a bowl and add all the ingredients except for the cheese and butter. Mix well until evenly coated.
- Preheat the oven to 200°C (fan). Line a baking tray with a non-stick baking sheet and spread the potatoes out evenly.
- Bake for 45-50 minutes. Around the 40-45 minute mark, check for doneness by inserting a skewer or fork—if it slides in easily, they’re ready.

- Once cooked, take them out of the oven and carefully cut a slit in the middle to create a pocket (without cutting them fully in half).

- Add about ¼ teaspoon of butter to each potato, then stuff them with your grated cheese of choice, letting it melt into the hot potatoes.

- Serve with your favorite protein and veggies, and enjoy!
