If you’re a fan of pancakes, you’re in for a treat with these delicious cottage cheese pancakes. This savory breakfast option is not only delicious but also keeps you feeling full for hours on end. When I had these I was full for at least 5 hours!
I always wanted to try cottage cheese but despite my love for cheese, the only thing that was keeping me from trying it was the way it looked. But I decided to try it out by making these fluffy cottage cheese pancakes. And upon taking the first bite of these pancakes, I fell in love!
Cottage cheese, it turns out, blends seamlessly into the batter, giving a subtle creaminess that elevates the flavor without overpowering it. So if you are not a fan of cottage cheese or have no idea if you’ll like it then do not worry as you can not taste it much in the pancakes. Plus it literally tastes just like cheese!
There are two ways to making theses cottage cheese pancake recipe. One way is blending all the ingredients for a smooth batter or another way is simply mixing them for a more rustic texture. Both methods come out equally delicious, although my personal preference leans toward the silky smoothness of the blended approach.

Ingredients In These Fluffy Cottage Cheese Pancakes
- Cottage cheese: It’s the star of the show, so make sure you pick up a high-quality one for the best flavor.
- Plain flour: Just a touch of this is needed. If you prefer, you can switch it out for gluten-free flour.
- Jumbo oats: Opt for organic jumbo oats if possible. While any oats will do, jumbo oats are the healthiest and least processed option. Highly recommended!
- Lemon zest: This ingredient is non-negotiable! Believe me, the lemon zest takes these pancakes to the next level. Only a zest of one lemon is required (not the entire fruit).
- Eggs
- Baking powder
- Pure organic maple syrup: If maple syrup isn’t your thing, feel free to substitute it with your preferred sweetener such as pure vanilla or perhaps some Ceylon cinnamon.
How To Make These Healthy Cottage Cheese Pancakes
- Simply toss all the ingredients into a blender, including the lemon zest, and blend until smooth. Let the mixture sit for at least 2 minutes.
- Next, preheat your pan for about a minute. Add a bit of coconut oil to the pan. This healthier alternative to sunflower or vegetable oil adds a nutritious touch without altering the flavor of your pancakes. As soon as the oil melts, pour in your pancake batter. Don’t wait for it to heat up too much.
- To ensure uniformity, use a ⅓ cup to pour your pancakes. Cook one side until bubbles start to form, then flip and cook until golden brown.
- Once cooked, remove the pancakes from the pan and continue cooking until you’ve used up all the batter. You should end up with about 5-6 pancakes.
- Now, for the finishing touch: toppings! For these high-protein cottage cheese pancakes, I’ve found that a drizzle of pure maple syrup, a dollop of peanut butter, and a sprinkle of blueberries and raspberries make the perfect combination. Trust me, it’s absolutely delightful!
