These protein pancakes don’t contain protein powder; the high protein content comes from the cottage cheese, so you can feel good about using only natural, wholesome ingredients (except for the chocolate, but it’s a dessert, after all!).

How To Make Cottage Cheese Banana Pancakes
- In a bowl, mash a medium banana with a fork until smooth. Add all the ingredients except the chocolate and mix until well combined.
- Chop the dark chocolate into small chunks and fold them into the batter. Let the mixture sit for 5 minutes.
- Preheat your pan to low-medium heat. Once warm, add coconut oil to a pan. Using a 1/4 cup measure, pour the batter into the pan. Cook for about 2 minutes.
- Note that the pancakes might not bubble; check if they’re ready to flip. If not, cook for an additional minute before flipping. Cook for another 1-2 minutes on the other side, ensuring they don’t burn. If they start to burn, lower the heat slightly.
- Transfer the pancakes to a plate and add your favourite toppings. I recommend blueberries, a drizzle of maple syrup, and a dollop of peanut butter for the best combination.
