Best Roast Chicken Recipe
Ingredients Needed
- Butter, softened
- Paprika
- Cajun seasoning
- Mixed herbs
- All-purpose seasoning
- Parsley flakes
- Garlic powder or onion powder
- Extra virgin olive oil
- Cumin
- Garam masala
- Lemon
- Red onion
- Fresh garlic
How To Make This Delicious Whole Roast Chicken Recipe
- Wash the chicken thoroughly and pat it completely dry so the marinade sticks well.
- Preheat the oven to 190°C.
- In a bowl, mix softened butter with all the spices and olive oil. Gently stuff some of the marinade under the skin of the chicken to season it from the inside, then spread the rest over the outside. Squeeze half a lemon over the top.
- Place the chicken in a baking dish. Slice the red onion thinly and arrange it around the chicken, adding a few slices inside as well. Peel 3–4 garlic cloves, tucking some under the skin and leaving the rest around the chicken to release flavor.
- Cover with foil and place in the oven. For the first hour, baste the chicken every 20 minutes to keep it juicy.
- After one hour, baste once more, remove the foil, and return the chicken to the oven uncovered for about 30 minutes, until the skin turns golden and crispy.

- Remove from the oven, let it rest briefly, then serve. This roast chicken is perfect with potatoes, Yorkshire pudding, veggies, and plenty of gravy.

- Enjoy!
Top Tips
- For juicy, crispy roast chicken, baste it every 20 minutes during the first hour of cooking. After an hour, remove the foil and roast uncovered for another 30 minutes—this gives you perfectly golden skin without drying out the meat.
- Use butter that’s still cold but softened. This makes it much easier to mix with the spices and spread under the skin. If it’s melted, it becomes messy and won’t coat the chicken as evenly.
- Always pat the chicken dry before adding the marinade. This simple step helps the seasoning stick better and gives you a flavorful, evenly roasted chicken.
- For the best results in any simple roast chicken recipe, allow the chicken to marinate for a few hours—or even better, overnight. If you’re short on time, 30 minutes to an hour will still add plenty of flavor.
