Servings: 10 muffins
- 13 medjool dates
- 1 cup warm milk
- ¼ cup smooth almond butter i recommend almond butter over peanut butter to keep the taste subtle and not an overpowering nutty flavour
- 2 eggs
- 1 cup self raising flour
- Pinch of salt
- Chocolate chips for mixing and topping
Remove the pits from the Medjool dates, place them in a bowl, then pour warm milk over them and leave to soak for 20 minutes.
After 20 minutes, add the soaked dates and milk to a blender along with the smooth almond butter and blend until completely smooth.
Pour the mixture into a large bowl, add the remaining ingredients, and mix until well combined.
Preheat the oven to 180°C.
Lightly grease a muffin tray with butter, divide the batter evenly between the moulds, and sprinkle chocolate chips on top if you want extra chocolate.
Bake for around 12 minutes, checking after 10 minutes and returning to the oven for an extra 1–2 minutes if needed. Cooking them any longer will completely dry them out!
Remove from the oven, allow the muffins to cool slightly, then enjoy.
