For the Salad:
- 1 cup romaine lettuce
- 1 small sourdough bread
- cheese (as much as you want) shaved Parmesan or mild cheddar
- 1/2 avocado optional
Prepare the Chicken and Crispy Bread
Wash your chicken and slice the chicken breasts lengthwise into three thin pieces. Then marinate with salt, black pepper, garlic granules, paprika, soy sauce, and olive oil.
Beat one in a wide bowl. In another bowl, add breadcrumbs.
Coat each chicken piece in egg, then in breadcrumbs until fully covered.
Heat a pan on medium-low, add butter or coconut oil, and fry the chicken until golden and fully cooked.
Preheat your oven to 185°C (365°F). Cut bread into small cubes, drizzle with olive oil, and toss to coat evenly. Spread on a lined baking sheet and bake until crispy and golden, turning occasionally. Keep an eye on them so they don't burn!
Make the Caesar Salad Dressing
Assemble The Salad
Chop the romaine lettuce and, if using, dice the avocado.
Toss the lettuce and avocado with the Caesar dressing in a large bowl. Add the crispy bread cubes and mix gently.
Shave cheese on top and mix lightly.
Slice the chicken into strips and place on top of the salad.
Enjoy!
