- 1 medium chicken with skin (cut into 6-8 pieces_
- 1 white onion
- Fresh parsley and coriander handful each
- 2 tsp salt you can start with 1.5 tsp and add more if needed once the broth is cooked
- 1/4 tsp black pepper
- 1/2 tsp turmeric
- 1 dried bay leaf
- water enough to fully cover the chicken
Wash the chicken thoroughly with lemon and salt, then rinse well with water.
Place the chicken into a large pot, cut the onion into four pieces, and add it in. Add the fresh parsley and coriander (no need to chop them), sprinkle in your spices, and pour in enough water to fully cover the chicken.
Bring the pot to a boil over medium high and cook the chicken for about 45 minutes. After this time, remove a piece to check if it’s fully cooked—if not, let it simmer for an additional 10 minutes.
Once the chicken is cooked, remove the pieces from the pot (you can use them for homemade chicken soup). Set a sieve over a large heat-safe bowl and carefully pour the broth through it, allowing the homemade chicken broth to collect in the bowl while the onions and herbs stay in the sieve.
Your fresh, flavourful homemade chicken broth is ready to use, store, or freeze.
If you want it to cook for longer to get the maximum benefits. Then bring it to a boil at high heat and then when it starts to boil (if there is foam at the top, take it off and discard it), bring the heat down to low and let it simmer for 3 hours!
