Homemade Cottage Cheese (makes 4 bagels)
- 1 cup plain flour (and 1 tbsp)
- 1 cup full fat cottage cheese
- 1 1/2 tsp baking powder
- a pinch of salt
- 1 egg
- sesame and poppy seeds
Bagel Pizza Toppings
- 1 can tuna (I used in brine)
- 1 small white onion
- tomato passata
- cheese
- a drizzle of extra virgin olive oil
Homemade Bagels
In a bowl add your flour, baking powder, and salt (if you are adding it), and mix. Then add your cottage cheese, and mix with a spatula first then using your hands mix it together to form a dough. Then knead the dough together 10-20 times. The dough shouldn't be too sticky or dry either.
Form into a ball and then cover the bowl with a tea towel and let it set for 10 minutes (the dough isn't going to rise so if you see that it has risen then it's normal).
After 10 minutes, preheat your oven to 175 C and then start to flour the service and roll into a log. Then cut the log into 4 equal pieces.
Roll each piece into a 6-7 inch rope. And then bring the two ends together to form a bagel. Make sure you pinch the ends together so they stick and stay in a bagel shape. Then place each bagel on top of a non-stick baking sheet on your baking tray
Whisk an egg and brush the top of the cottage cheese bagels with the beaten egg and top with the toppings (sesame and poppy seeds).
Pop in the oven and bake for 25 minutes until golden and puffy. And then allow to cool completely for at least 15-20 minutes (do not skip this part!!)
Let it cool down before making your pizza bagel. I recommend making these ahead of time and having them ready for the week for when you want to make your pizza bagel!
Bagel Pizza
Start by thinly slicing a small white onion and preheating a pan. Add a little ghee and sauté the onion until it softens. Season with a pinch of salt and black pepper, then add a can of well-drained tuna (I use tuna in brine). Stir everything together and finish with a light drizzle of extra virgin olive oil for added flavour.
Next, slice your bagel in half and spread a layer of tomato sauce—I always use passata because it gives such a rich, fresh flavour to homemade pizzas. Sprinkle on some cheese, then add your tuna and onion mixture, and top it off with a little more cheese.
Pop it in the oven until the cheese is melted and bubbly.
Enjoy!
