9 High Protein Breakfast Recipes
Healthy Breakfast With Eggs
1. Cottage Cheese Pancakes

Cottage cheese pancakes are my absolute favorite breakfast dish. They taste absolutely delicious and are perfect for those special morning occasions. The creamy texture, lemon zest, and subtle tang of the cottage cheese make these pancakes stand out.
Plus, they can be meal prepped the night before! Simply prepare the batter, cook the pancakes, and store them in the fridge. The next morning, just heat them up for a quick and delightful breakfast treat.
Ingredients
- 2 heaped tbsp cottage cheese
- 1 heaped tbsp plain flour
- 2 tbsp organic jumbo oats
- 1 egg
- 1/4 tsp baking powder
- lemon zest of half a small lemon
- 1 tsp pure organic maple syrup
Instructions
- Add all the ingredients into a blender, including the lemon zest, and blend until smooth. Let the mixture sit for at least 2 minutes.
- Next, preheat your pan for about a minute. Add a bit of coconut oil to the pan. As soon as the oil melts, pour in your pancake batter. Don’t wait for it to heat up too much.
- To ensure uniformity, use a 1/4 cup to pour your pancakes. Cook one side until bubbles start to form, then flip and cook until golden brown.
- Once cooked, remove the pancakes from the pan and continue cooking until you’ve used up all the batter. You should end up with about 3-4 pancakes.
- Now add in your toppings! For these high-protein cottage cheese pancakes, I’ve found that a drizzle of pure maple syrup, a dollop of peanut butter, and a sprinkle of blueberries and raspberries make the perfect combination. Trust me, it’s absolutely delightful!
2. Veggie Omelette
I love a good cheesy omelette, but for extra fiber to stabilize blood sugar levels and keep you fuller longer, adding some veggies makes this high-protein breakfast even better. You can choose any veggies you like. Here’s an example recipe you can follow.
Ingredients:
Egg Mixture:
- 3 large eggs
- Salt and pepper to taste
Vegetable Filling:
- 1/4 cup bell peppers (mixed colors), finely chopped
- 1/4 cup onion, finely chopped
- 3-4 cherry tomatoes, halved
- 1/4 cup spinach, chopped
- 1/4 cup mushrooms, sliced
- 1/4 cup shredded cheese (cheddar, mozzarella, feta, or your choice)
- 1 tablespoon butter
Instructions:
- Heat olive oil (or butter) in a non-stick skillet over medium heat.
- Add the chopped onions and bell peppers. Sauté for about 2-3 minutes until they begin to soften.
- Add the mushrooms and cook for another 2 minutes until they are tender.
- Add the spinach and cherry tomatoes. Cook for an additional 1-2 minutes until the spinach is wilted and the tomatoes are slightly softened.
- You can either pour the egg mixture on top or you can remove the veggies, pour your egg, and then pour the veggies on top.
- For less dishes to be cleaned later I recommend just pouring the egg mixture, letting it cook for 1-2 minutes or until the edges start to set.
- Carefully fold the other half of the omelette.
- Let the omelette cook for another minute or until the cheese is melted and the omelette is fully set.
- Serve with a side of avocados or fresh salad for a complete meal!
3. Shakshuka

This recipe can be meal prepped the night before and enjoyed for lunch as well. If you’re short on time, make extra for both breakfast and lunch. As an authentic Moroccan dish created by a Moroccan, trust me—this shakshuka recipe is the best you’ll have!
Ingredients:
- 1 mediume white onion
- 3 large vine tomatoes
- 1 red bell pepper

- 1/4 tsp cayenne pepper (you can adjust to taste)
- 1/2 tsp cumin
- 1/2 tsp black pepper
- 2 tbsp finely chopped coriander
- 6 eggs (this is 2 for each person)
- crumbled feta cheese (optional)
Instructions:
- Gather ingredients and dice tomatoes, onions, and peppers.

- Serve on a plate, crumble feta cheese if desired, and enjoy!
4. Toast With Avocado And Eggs

This high-protein breakfast was my go-to during pregnancy, and I sometimes even have it for lunch when I’m too busy to make anything fancy. It takes just 5-10 minutes to prep in the morning and is well-balanced with healthy fats and protein.
Ingredients:
- 1 slice of wholegrain sourdough bread
- 1/2 to 1 avocado, mashed
- 2-4 eggs (depending on your preference – 2 eggs is only 14grams of protein so if you want to reach 27-30g without adding another source of protein in have 4 eggs e.g. scrambled or fried)
- Butter for frying
- Extra virgin olive oil (optional)
- Grated cheese or crumbled feta (optional)
Instructions:
- Toast your bread until it reaches your desired level of crispiness.
- While the bread is toasting, heat some butter in a pan and fry the eggs to your preferred level of doneness.
- Spread the mashed avocado on your toast.
- Drizzle with extra virgin olive oil for added flavor (optional).
- Place the fried egg(s) on top of the avocado spread.
- For an extra yummy touch, grate some cheese or crumble feta on top.
5. Full English
To savor a healthier Full English Breakfast, it’s essential to minimize frying in vegetable or sunflower oil. Instead, opt for grilling or baking methods to reduce unnecessary fats while maintaining the delicious flavors of sausages, bacon, and other components.
This small adjustment ensures you can relish this high-protein meal guilt-free, appreciating its hearty goodness without compromising on health-conscious choices.
Ingredients:
- 2 large eggs
- 2 lean chicken or turkey sausages (not the processed ones – real chicken or turkey ssauces)
- 2 slices of turkey bacon
- 1 large tomato, halved
- 1 cup button mushrooms, sliced
- 1 tablespoon butter
- Salt and pepper to taste
Instructions:
- Preheat your oven to 375°F (190°C).
- Line a baking sheet with parchment paper.
- Place the sausages and turkey bacon on the prepared baking sheet.
- Bake in the preheated oven for about 15-20 minutes, turning halfway through, until the sausages are cooked through and the bacon is crispy.
- While the sausages and bacon are cooking, heat 1/2 tablespoon of butter in a large non-stick skillet over medium heat.
- Add the sliced mushrooms and cook for about 5 minutes, stirring occasionally, until they are tender and browned. Season with a pinch of salt and pepper. Remove from the skillet and set aside.
- In the same skillet, add the remaining 1/2 tablespoon of butter.
- Place the tomato halves cut side down and cook for about 3-4 minutes, until they are slightly softened and caramelized. Remove from the skillet and set aside.
- You can prepare the eggs to your liking: poached, scrambled, or fried.
- Add all in a plate and enjoy!
