Try this delicious and healthier date bark recipe made with cashew butter instead of peanut butter. Perfect for date lovers and a family favorite!

These date barks became a huge trend last year—everyone was making them! Honestly, I didn’t jump on the bandwagon at the time because I already had my Date Snickers recipe from a few years ago, and it felt like the same thing, just in bark form.
A few months ago, while brainstorming date recipes (because my family and I absolutely love dates!), I remembered the viral date bark. I wanted to put my own twist on it—something a little different and healthier. That’s when I decided to skip the peanut butter and use creamy cashew butter instead.
When I finally made these, they were a hit! My toddler was obsessed, and we couldn’t stop eating them. We’re already planning to make another batch as soon as we stock up on Medjool dates. In my opinion, these taste even better than Date Snickers!
I hope you love this peanut butter-free version of date bark as much as we did. Don’t forget to leave a rating and comment below—your feedback means the world to me! And if you share them on Instagram, tag me @lotsoflovemariam so I can see your creations. 😊

Date Bark Recipe
Date Bark Ingredients
- Medjool Dates
- Chocolate (I used 46% cocoa)
- Coconut Oil
- Cashew Butter: When getting your cashew butter, ensure it says 100% cashew butter as some can include seed oils such as sunflower seeds which are not good for your health.
- Roasted Hazelnuts: I roasted them at home, but you can use store-bought roasted hazelnuts or substitute with any nuts you like.
How To Make This Chocolate Date Bark Recipe
- Remove the pits from the dates and arrange them on a tray lined with non-stick baking paper. Use the bottom of a cup to flatten the dates. To prevent sticking, place a small piece of non-stick baking paper between the cup and the dates. (I used a small tray that fits about 10-12 dates.)
- Spread a layer of smooth cashew butter evenly over the flattened dates.
- Crush your roasted hazelnuts and sprinkle them generously on top. Feel free to add as much as you like!
- In a small saucepan over low heat, melt your chocolate with a little coconut oil, stirring constantly to keep it smooth. Be sure to watch it closely to avoid burning.
- Once the chocolate is melted, pour it over the hazelnuts and spread it evenly to cover the entire tray.
- Once set, remove from the fridge, cut into pieces, and enjoy your delicious date bark!

How To Store
Store your date bark in an airtight container, layering it with non-stick baking paper to prevent the cashew butter from sticking to the container. Keep it in the fridge, where it will stay fresh for up to 2 weeks!
