Coconut stuffed dates dipped in chocolate for a healthier, homemade take on Bounty bars—perfect for a quick, sweet snack!

Snickers dates and peanut butter stuffed dates have taken over the internet lately—and for good reason, they’re delicious! But have you tried coconut stuffed dates? I like to call them Bounty dates. If you’re from the UK, you’ll know exactly what I mean—Bounty bars were that classic coconut-filled chocolate treat we didn’t all love as kids, but somehow grew to appreciate as we got older. Maybe it’s a sign of maturing?
As always, I’m all about creating healthier versions of our favourite treats, and these coconut-stuffed dates are the perfect example. They’re sweet, chocolatey, and satisfying—just like a Bounty bar, but made with wholesome ingredients.
Honestly, I think these taste even better than Snickers dates, and they’re just as quick and easy to make. You can prep a batch in advance and have a healthy sweet treat ready to enjoy all week.
If you give these chocolate covered coconut stuffed dates a try, I’d love to hear what you think! Leave a rating and comment below, and if you share them on Instagram, don’t forget to tag me @lotsoflovemariam—I’d love to see your creations!

Coconut Stuffed Dates Recipe
Ingredients Needed
- Medjool dates
- Desiccated coconut
- Coconut cream (scoop the thick part from canned coconut milk; chill it first if it’s too watery)
- Chocolate (any kind you like for coating)
- Coconut oil
How To Make Bounty Dates
- Remove the pits from the dates and set them aside.
- In a bowl, mix together the desiccated coconut and coconut cream until well combined. If the coconut cream from the tinned coconut milk is too watery, then just place it in the fridge until the cream hardens.

- In a separate bowl, melt the chocolate with the coconut oil in the microwave, stirring until smooth.
- Stuff each date with the coconut filling using a spoon, then dip them into the melted chocolate to coat.

- If you’d like, sprinkle a little extra desiccated coconut on top for decoration.

- Place the dates in the freezer for 5–10 minutes, or until the chocolate has set.

- Enjoy!
