Cinnamon Sugar Pretzel Bites Recipe
Ingredients Needed
- Flour – you’ll need extra as the dough can be sticky from the yogurt, so just keep adding a little at a time until it’s easy to roll without sticking
- Baking powder
- Salt
- Natural style Greek yogurt – I recommend natural style over authentic Greek yogurt, as it makes the dough much softer and gives that pretzel-like texture
- Sugar
- Cinnamon
- Egg
- Butter
How To Make Cinnamon Pretzels Without Yeast
- In a mixing bowl, combine the flour, baking powder, salt, and natural-style Greek yogurt. Start with a spatula, then switch to your hands and knead until a dough forms. If the dough feels sticky, gradually add a little more flour until it becomes smooth and easy to roll, but be careful not to add too much – as long as you can easily roll it in a floured surface.
- Lightly flour your worktop, divide the dough into two portions, and roll each half into a long rope. Cut the ropes into small bite-sized pieces. Keep in mind they do expand in the oven.

- Place the pretzel bites onto a baking tray lined with non-stick baking paper. Preheat the oven to 175°C (350°F). Beat an egg and brush it over the pretzel bites to give them a golden finish.
- Bake for 17–20 minutes, until golden. 17 minutes is usually perfect, as the bites continue to cook a little while cooling. Avoid overbaking so they don’t dry out.
- Once they’ve cooled enough to touch, transfer the pretzel bites into a large bowl. Melt the butter, let it cool for 3–5 minutes, then pour it over the pretzels and toss to coat. Mix together sugar and cinnamon in a separate bowl, sprinkle it over the buttered pretzels, and toss again until evenly coated.

- Serve warm as they are or pair them with melted chocolate for dipping. Enjoy your easy homemade cinnamon sugar pretzel bites without yeast!

Tips:
- Use natural-style Greek yogurt instead of authentic Greek yogurt. I found that using authentic Greek yogurt made the dough turn out a little tough once baked, whereas natural-style yogurt kept the dough soft and fluffy, much closer to the texture of real pretzels.
- Let the pretzels cool slightly before pouring over the butter. If you add the butter while they’re still hot, the cinnamon sugar will melt into the dough instead of coating the outside. Allowing them to cool a bit first helps the sugar mixture stick perfectly.
