Ingredients Needed To Make Almond Flour Cookies
- Almond flour
- Coconut sugar: You can use brown sugar instead but I found coconut sugar gives such an amazing taste to these almond flour cookies.
- Maple syrup: You can swap this with vanilla extract
- Eggs
- Unsalted butter: This needs to be room temperature and softened.
- Baking soda
- Salt
- Chocolate chips
How To Make Gluten-Free Almond Flour Cookies
- Using an electric hand mixer, beat softened butter with the coconut sugar until you form a creamy-like texture.
- Then add your maple syrup, and eggs (this will be 1 egg and 1 egg yolk) and combine with the electric hand mixer.
- Using a fine mesh sieve, place it on top of your bowl and sieve your almond flour, baking soda, and salt. Then mix it all using a spatula.
- Add in your chocolate chips and fold in.
- Start preheating your over to 175 C and line a baking sheet on your baking tray.
- Using a tablespoon or a cookie scoop, scoop the dough balls into the baking sheet. Then flatten slightly (make sure they are spread out a little so they don’t stick to each other when they are baking. Place a few chocolate chips on top so they come out pretty.
- Bake the almond flour cookies for 10-12 minutes (keep an eye on them as they become golden very quickly), and when done, let them cool down completely. They will carry on cooking themselves as they cool down which is why it is important to not overcook them.

Tips To Get Chewy Cookies
- Make sure your butter is softened by leaving it out at room temperature—don’t use the microwave to soften it! Properly softened butter is key to achieving soft and chewy cookies.
- Make sure you do not overbake the cookies. They finish cooking during the cooling process.
- Sift your dry ingredients. Sifting your almond flour avoids clumps in your cookies.
Storing Instructions
Let them cool down completely. Then store in an airtight container for up to 1 week. You can place them in the fridge if you want them to last longer.
